Whiskey White Chocolate Cranberry Cookies Recipe

I made some cookies for the family during Christmas time.  Sound strange but I got to admit that I don't like to drink any kinds of alcohol beverages.  However, I do like to use alcohols to cook and bake.  I think the alcohols take the food or the baked goodies to a deeper level of flavor.

Whiskey White Chocolate Cranberry Cookies Recipe (Make about 24 cookies)

Ingredients
You could ignore the oatmeal in the picture.
I was thinking of putting some oatmeal inside the batter, but I though it will be too much texture for one little cookie.
  • 1/2 cup of Whiskey and 1/2 of Gold Rum (to soak the cranberries in, then saving 2 teaspoons of it for later), if you don't have rum, just use 1 cup of Whiskey.
  • 1 cup of dried cranberries
  • 1 cup (two sticks) of butter, room temperature
  • 3/4 cup of granulated sugar
  • 3/4 cup of lightly packed brown sugar
  • 2 eggs, room temperature
  • 1/2 teaspoon of vanilla extract
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 1/4 cups of all-purpose flour
  • 1 cup of white chocolate chips
Instruction

1. Put the cranberries in a measuring cup and then pour whiskey and/or rum.  Put the cup in a microwave and heat it for 30 seconds.  And let the cranberries soak in the alcohol for about 15 to 30 minutes.

2. Preheat oven to 375°F. Beat the butter until light and fluffy. Add the sugars and beat again until light, fluffy and well incorporated.

3. Add the eggs, vanilla extract, and add 2 teaspoons of the Whiskey that the cranberries soaked in. Beat well until light and fluffy. Scrape down the sides of the bowl midway through to ensure even mixing.

4. Sift together the flour, baking soda, and salt, then add to the mixture a bit at a time, beating until just mixed. Fold in the brandy soaked cranberries (get rid of the liquid by squeezing the cranberries) and white chocolate chips. Let chill for 15 minutes in the fridge.

5.  Line a baking sheet with parchment paper.  Flour your hands (to prevent the dough sticking on your hands), and grab about a spoonful of dough and make it about a size of ping-pong ball.

6. Bake at 375°F for 10-12 minutes or until golden brown. Let cool for a minute, then transfer to a wire rack to cool completely.

I made some little vintage inspired tags to dress up the cookies.

O Christmas Tree

It seems that I have not updated anything on my blog for a little while.  I have been very busy for the last few days (or weeks); I will share more with all of you about what I was busy for in the next few posts.

I made these cute Charlie Brown Christmas toppers and some matching gift tags last week.  They are now for sale on my Etsy shop.  One night I was driving home, and I didn't know why I kept thinking about the Charlie Brown's Christmas tree.  Yup, I know, it is the most unusual Christmas tree (click here to see what's the story behind this famous Charlie Brown's Christmas tree) you ever seen.  The tree looks so alone with one ornament hanging there (glad that Linus put his lovely light blue blanket around the tree to make the tree not so lonely)...

Christmas tree remind me of my childhood with my family - my family and I always enjoyed of decorating our skinny plastic-y Christmas tree each year.  Even I have not gone home for Christmas for a while and my parents stopped putting up the Christmas tree ever since my sister and I moved to the States (good that my parents are here in the States for Christmas for the very first time), the memory of decorating the tree is still fresh and valuable to me.

I wish you all have a safe, warm and wonderful Christmas with your family and friends.  No matter you are decorating your house with your kids, baking ginger bread man cookies with your mom or watching the classic movie, the Christmas Story with your brothers and sisters.  Remember, these memories will stay with you for a long time...or forever!

PS:  If you are interested in buying a Charlie Brown's Christmas tree or want to be different this year, here is a list of online stores I found online.  I also saw the tree at Urban Outfitters Store too.

Super Mario Bros Round 3

I have been busy this week about couple rush orders, Christmas shopping and some Christmas craft projects.  It's been a very productive weekend though.

I am so blessed that I got couple orders from my Etsy Shop.  Even though they are rush orders, but I am so glad that I could finish them on time to have them ready for my customers.  I finished a dozen of Super Mario Bros cupcake toppers for a customer in MI and some cupcake picks and gift tags for another customer in FL (pictures will be posted soon).  It's my third time of doing the Super Mario Bros cupcake toppers in these two months; did I get bored?!  No, every time I found new way to make them look better.

New Item - Cupcake in a Jar

Not a genie in a bottle, but a cupcake in a jar!  We are proud to introduce our new cupcake item - Cupcake in a Jar!  They are cute, very portable and convenient to eat, and of course they are yummy!  The holiday seasons is coming, they will make a great gift to someone you love.  I used a bigger jar (16 oz) in the pictures (they fit in two cupcakes each jar).  However, if you would like to have a smaller jar, please let me know.  I could also use a smaller jar (250 ml) to fit in just one cupcake.  They also make good wedding and party favors.  I will decorate each of them to match the theme of the party.

Here is some ordering information:  6 (16 oz) minimum or 12 (250 ml) minimum.  They will be professionally decorated as in the pictures.

This will make a nice baby shower or birthday party favor.

This one will be a good gift/favor for birthday

Holiday season is coming!  Are you planning to get something for your family and friends?
How about giving them a cupcake in a jar!

Inedible but Sweet - Twinkie Chan's Crafts

A food lover, a dessert lover, an artist, a crafter, a knitter and crocheter, Twinkie Chan, who successfully turned her knitting and crochetting hobby to a successful business.  Her crafts are mostly inspired by food and desserts.  They are not edible but they absolutely look "yummy" on eyes.  There are too many cute pictures of her crafts, and I don't think my blog can't hold them all  If you want to check out more of her works or even interested in buying, click on her name above and it will direct you to her offical website.

Her hand made crafts are the cuttest thing ever!  But they come with a high price too, a classic cupcake scarf could cost you $175.00.  If you don't want to spend over $100 on a scarf, how about DIY (Do it Yourself)?  Her book only cost you about 10 dollars from Amazon.  She also shares her idea and tips on her very own blog.  Christmas is coming, time to make something for your beloved ones!
